We are in the thick of winter now and nothing quite gets me through those creative blocks or afternoon breaks like these winter warming drinks. I say Chai tea by day, Mulled with by night. I hope you enjoy these recipes. I’ve adapted from others I’ve seen online and added in a drizzle of Yolo. These make me seem like I drink too much alcohol but I promise it’s not the case.
Homemade Chai Tea
Ps. I also tried this recipe with Rice milk instead of whole Cows milk and it works really well.
What you need:
2 Cinnamon sticks
2 tsp Black peppercorns
8 Green Cardamom cloves
5 Cups Water
3 Cups Whole milk
7 teaspoons of Black tea
¾ Cup Packed coconut sugar
2 inch piece of fresh ginger
Start by combining Cinnamon, Pepper corns, Cloves, Cardamom and ginger on medium heat in a saucepan. Use a wooden spoon to bruise the spices.
Add 5 cups of water and bring to the boil, then reduce heat to a steady simmer for 10 minuets. Remove from heat and your black tea to brew for 5 minutes. Once at a medium heat add milk and sugar, stir until sugar is dissolved.
Use a sift to drain Chai into a teapot to serve. (Watch out as this step can get messy)
After a while once the Chai has cooled down and it’s a socially acceptable time to have a Bevvy, you can add some cubes of ice and a little dark rum to a tall glass.
What you need:
2 Bottles of Red wine (Obviously your going
to share this with your friends)
2 Large Cinnamon stick
1 Vanilla pod
8 Green cardamom cloves
8 Star Anise
1 cup Brown sugar
1 Nutmeg nut (optional)
Peel half an orange and place in a saucepan on medium heat. Add all spices, sugar and the juice of both oranges. Pul squeezed orange remains in pot.
Pour just enough wine in to cover all ingredients, bring to the boil then reduce to a light simmer for 15 minutes stirring every so often to help the sugar dissolve.
Once mixture has reduced to fragrant syrup. Add rest of the wine and gently heat for 10 minutes. Be careful not to boil the wine, as this will cook the alcohol out!
Take off the element, pour the warm mulled wine onto a heatproof glass and ENJOY. I like to pop some floating spices in my glass to further flavour my cup. Grate nutmeg on before serving. (Wine might need reheating if you’re a slow drinker)
(Note to self, is it possible to pre-make the mulled wine syrup for future batches?)
